Barbequed Meat Balls


 
From my cousin Paulette’s recipe collection.
 
  • 1 & 1/2 pounds ground beef
  • 3/4 cups rolled oats
  • 1 tablespoon minced onion
  • 1/4 teaspoon pepper
  • 1 & 1/2 teaspoons salt
  • 1 cup milk

Combine above mixture and form into balls.  Roll in flour and brown in electric skillet (350 degrees).  Cover with BBQ sauce.

 

Barbeque sauce:

  • 2 tablespoons brown sugar
  • 1/2 cup water
  • 2 tablespoons worcestershire sauce
  • 1/2 cup minced onion
  • 1 cup of catsup
  • 1/8 cup of vinegar

Turn heat down to low (220 degrees).  Simmer until done, and sauce is fairly thick.  About 20 minutes.

 

Cheese Piggies


 
  • 2 cups shredded cheddar cheese
  • 2 & 1/4 cups biscuit mix
  • 1 lb lean mild sausage

Knead together.  Shape into teaspoon sized balls.  Bake at 400 degrees for 12 – 15 minutes.  Makes about 200 balls or less for larger balls.  Freeze well.

Tortilla Roll-ups


 
This recipe is from my sister Mary (Ebby).  She made the best homemade noodles too.  I’ll get to those another time.  I still miss her after almost 10 years. 
 
  • 2 large packages of cream cheese (softened)
  • 1 package of Hidden Valley Ranch Fiesta Dip
  • 1 bunch of green onions (chopped)

Mix cream cheese and dip mix thoroughly.  Add the green onions.  Spread on soft tortillas, roll and chill in fridg overnite.  Slice and serve. 

***When I make these I put a slice of shaved ham on before I roll them up.
